FAQ for Plancha
What is the difference between a plancha and a griddle plate?
Technically, there is no difference. Plancha is simply the Spanish term for a griddle plate.
Both describe the same principle: a solid metal plate on which food is grilled directly instead of on a grate. The term plancha is often used to emphasize Mediterranean-style grilling and very high heat.
Is a plancha worth it?
Yes – a plancha significantly expands your grill. Many foods can be prepared more easily and cleanly on it than on a traditional grill grate.
- Fish does not fall apart
- Shrimp and vegetables do not fall through the grate
- Smash burgers and breakfast dishes are possible
- Finely sliced onions, mushrooms or peppers
- Cheese such as feta or halloumi
- Stir-fries or pan-style dishes
- Pancakes, crêpes or fried eggs
- Prepare small side dishes alongside your steak
Many grill enthusiasts then only use the grate for classic steaks.
What is the difference between a fire plate, a plancha and a griddle plate?
Fire plate
- very large cooking surface
- operates with wood fire or embers
- multiple natural heat zones
- complete outdoor cooking station
- sits on a fire barrel, fire bowl or kettle grill
Plancha / griddle plate
- compact design
- can be used with gas, charcoal or wood
- direct cooking at high heat
- placed on the grate or replaces it completely
- can also be used on swivel grills
In short: The fire plate is a standalone wood-fired grill with different heat zones. A plancha is a flexible upgrade for existing grills.
Why use a plancha instead of a pan?
- significantly higher temperatures
- real roasted flavors instead of a boiled taste
- larger cooking surface
- multiple ingredients at the same time
- no heat buildup like in a pan
- liquids can drain off instead of stewing
In a pan, juices collect and the food tends to cook in its own liquid. On a plancha, liquids evaporate immediately or drain away – creating real roasted flavors.
In short: A pan stews – a plancha grills.
What is a plancha in grilling?
A plancha is a solid stainless steel griddle that is placed on the grill or used instead of the grill grate. It creates intense roasted flavors while allowing precise heat control.
What material should a plancha be made of – cast iron or stainless steel?
For everyday grilling, stainless steel is usually the more practical choice.
Stainless steel plancha
- rust-resistant
- very easy to maintain
- no seasoning required
- hygienic and neutral in taste
- hardly warps with temperature changes
- ideal for fish, vegetables or breakfast
Cast iron plancha
- retains heat for a very long time
- great crust on steaks
- rusts more easily
- requires more maintenance
- sensitive to moisture
Conclusion: Cast iron is a steak specialist that requires more care. Stainless steel is more versatile and much better suited for everyday use.
What is a griddle or sizzle plancha?
Sizzle plancha
The compact version for side or infrared burners on many gas grills. Ideal for searing small portions at very high heat.
Griddle plancha
A larger plancha for the main grilling area. It is solidly built and adapts to many gas grills thanks to adjustable supports. The thick stainless steel plate stores a lot of heat and ensures even cooking over a large surface.
Can a plancha warp when exposed to heat?
A minimal amount of warping can never be completely avoided with metal for physical reasons. What matters is how strong the effect is.
Thanks to optimized material thickness and construction, the plate only moves minimally at high temperatures. This effect is normal and has virtually no impact on grilling.
If a plancha should warp unusually, our Grillrost Family Guarantee applies.
Can I place a plancha on any grill?
Yes – our stainless steel plancha works on gas, charcoal or wood-fired grills.
Universal plancha
The universal plancha is simply placed on the existing grill grate.
Custom-fit plancha
This version completely replaces the original grill grate. You can find the right griddle plate for your grill in the accessory finder.
Are there matching plancha inserts for Weber, Napoleon and other grills?
Yes. With these versions, the existing grill grate is removed and replaced with a custom-fit plancha.
This way, you grill directly on the plate instead of on bars – without food falling through and with much stronger roasted flavors.
You can find matching models in the accessory finder.
What shapes are available for plancha griddle plates?
- round
- rectangular
- open at the front
- fully closed
The classic plancha is rectangular and open at the front. This allows fat to drain away so the food grills instead of boiling in its own juices.
Does a stainless steel plancha need to be seasoned?
No. Stainless steel does not need seasoning. Simply preheat it and start grilling.
Which oil should you use for a plancha?
What matters is a heat-resistant oil, for example:
- rapeseed oil
- sunflower oil
- neutral vegetable oils
Oil is not absolutely necessary, but it can reduce sticking with delicate foods.
How do you properly clean and maintain a plancha?
- Scrape off grease and residue with a spatula
- wipe with water
- let it dry briefly or heat it up
If it is more heavily soiled, stainless steel can easily be cleaned with dish soap or soaked.
Compared to cast iron, stainless steel is much easier to maintain and does not require seasoning.
