Bacon Bomb


Bacon Bomb - you have to try it! Very, very tasty! You can of course vary the filling, but we are convinced by this recipe!

For one Bacon Bomb (approx. 5-6 people) you need:
  • 800 g mixed mince
  • 500 g cheese (our tip: Emmental)
  • approx. 40 slices of bacon, bacon or breakfast bacon - all the same 🙂
  • 10 - 20 cocktail tomatoes, depending on your preference
  • your favourite rub & barbecue sauce
  • salt & pepper

Preparation:

1) Lay out a braided carpet with the bacon on baking paper. This is important, otherwise it will be difficult to roll up the bacon bomb afterwards. The braiding of the carpet can be found in many videos and is very simple.
2 ) Mix the seasoned mince with some barbecue sauce and rub, spread it on the bacon and brush some more barbecue sauce on top. We used a standard BBQ sauce for this. Don't spread the mince all the way to the edges, otherwise it will be a little difficult to roll up afterwards.
3) Now finally comes the cheese - this is grated and spread evenly over the mince. 

4) Top with crunchy little cocktail tomatoes and roll the whole thing up using the baking paper. Press the ends together a little so that everything that belongs together stays together.
5) Place on the barbecue over an indirect heat for approx. 1.5 - 2 hours and bring down to a core temperature of 68°C. Rub with the rub shortly beforehand. 
 
6) Serve - we served this with jacket potatoes and a homemade sour cream dip from BBQpit. We can also imagine it with a green leaf salad or vegetables. We wouldn't recommend serving it with pasta or rice, as the bacon bomb is very substantial in itself.
Our verdict: Very tasty and we will definitely be making it again soon! The side dish also went very well with it and the sour cream dip is very tasty.
