Top rack for the Traeger Ranger with recipe for herb salmon


We love it when there are barbecue accessories that take the barbecue to the next level. There are many barbecue accessories on the market and some of them are useful and helpful, but grillrost.com has once again set new standards with the top grill for the Traeger Ranger pellet barbecue. In terms of size, the Ranger is a "small portable barbecue", but inside it is a fully-fledged pellet barbecue that is mobile thanks to its size and has nothing to hide from its big brothers.

The Ranger is often used when the two of us are barbecuing, as its grilling surface of 1,187 cm² is sufficient for two to four people. However, if you want to put a side dish on the Ranger in addition to the meat (or the vegetarian main component), then it gets a little too tight.
This is exactly what grillrost.com has come up with. The distance from the Ranger's normal grill grate to the lid is more than sufficient to simply create a second grilling level. This second level is now available on the market with the top grill .
The total grilling surface is almost doubled and the Traeger Ranger becomes a barbecue with sufficient capacity for several people. The grill is placed directly onto the existing grill via four recesses on the feet and fits perfectly. This means that the grill rack is bombproof and you don't have to worry about the food falling onto the normal grill.

The big advantage of the second grilling surface is that you can now easily grill meat and side dishes on the Ranger at the same time. Even long jobs with, for example, 2 (flat) pork necks, which become pulled pork, are now possible without any problems.
The top rack opens up many new possibilities for using the grill. It's not just the doubling of the grilling surface that allows you to grill twice as many people. It's also the number of possibilities that are significantly increased by the top grill. With our recipe below, we show you an easy way to grill the main component and side dish on the Ranger at the same time and to grill a delicious meal with the Traeger Ranger.

The recipe for grilled herb salmon on the Traeger Ranger grill:

Grilled herb salmon 

Ingredients: 
  • 750 g salmon  
  • 4 hands of mixed herbs such as parsley, chives, lovage, dill, chervil 
  • 1 lime, juice and zest 
  • 20g brown sugar 
  • 40ml olive oil 
  • salt 

Finely chop the herbs with a knife and then mix with the lime juice, lime zest, brown sugar, olive oil and a pinch of salt. 
Coat the salmon with the marinade and leave to marinate in the fridge for approx. 40 minutes.

The side dish: Courgette bacon towers

Ingredients 

  • 400g courgette 
  • 8 slices of bacon 
  • 200g herb cream cheese 
  • 100g cheddar, grated Cut the courgettes into pieces approx. 5 cm long. The courgette pieces are then hollowed out. However, they should still be sealed at least 1cm high on the underside, otherwise the filling will leak out. Then wrap a slice of bacon around each courgette tower. Mix the cream cheese and cheddar together and fill into the prepared courgette bacon turrets.

Another side dish: grilled corn with chilli butter

Ingredients 
  • 2 fresh corn cobs 
  • 100 g butter, soft 
  • 1 red chilli pepper 
  • salt
  • 1 teaspoon of smoked paprika 
  • pepper 

Boil the sweetcorn in salted water for about 10 minutes. When they have cooled down a little, cut the corn cobs in half. Cut the chilli pepper into fine rings, then mix with the butter at room temperature and the smoked paprika powder and season with salt and pepper. 
The butter should now marinate for about 30 minutes.

The barbecue

Heat the Traeger Ranger to 200 degrees. 

Place the prepared courgette towers and sweetcorn on the lower level, i.e. on the grill rack of the Ranger. They are grilled there for approx. 10 minutes. You can then turn the corn towers once. 
The prepared salmon is then placed on a piece of baking paper or butcher paper and placed on the grill rack from Grillrost.com. You can now simply place the wire shelf on the lower level of the Traeger Ranger. This is child's play, as the grill rack fits the grill perfectly and has specially designed recesses on its feet. 
The salmon is now grilled on the upper level for approx. 25 minutes. To serve, the salmon should have a core temperature of approx. 55 degrees. It is then cooked to a glaze and not yet dry. If the salmon is to be completely cooked through, it should have a core temperature of 60 degrees. 
A piece of baguette, a tasty remoulade or a tartar sauce go perfectly with grilled herb salmon.
