Surf & Turf skewers from the asado holder


We've had the Steckerlfisch and Asado Grill at home for a while now and after our first recipe with the beer meat on it was rather atypical for a Steckerlfisch grill and the second was classic Steckerlfisch, today we're merging both recipes into a Mediterranean surf & turf dish in a class of its own: surf & turf skewers from the Asado holder.

The fish skewer and asado grill is an incredibly versatile grill for fish and larger pieces of meat, or even skewers. You can use this barbecue on the kettle barbecue, on the fire barrel, in the fire bowl or, with the supplied ground spike, simply make a fire and barbecue on the ground. With the device developed by Grillrost.com, mackerel and trout can be traditionally grilled on wooden sticks, the Steckerln, over a bed of embers. You can turn the fish over and over again and adjust the angle of the skewers so that they end up wonderfully crispy and grilled. The plug fish holder is also an asado grill on which you can grill different types of meat and vegetables directly on and over the open fire.

With this self-developed device, mackerel and trout can be traditionally grilled on wooden sticks, the Steckerl, over a bed of embers. The fish are turned from time to time and can be adjusted in height to grill them deliciously crispy.
The adjustment is unique, which is why we have even had it patented. We stuck with the traditional wooden skewers, as the non-slip wood prevents the fish from slipping off. If you water the skewers before grilling, they will last forever, but even without it takes a long time for them to burn. The wooden skewers are made from beech wood by a joinery in Bavaria. We obtain the handles for height adjustment from a workshop for the disabled, which are also turned from beech wood. The remaining parts are made of food-safe stainless steel and are manufactured entirely in Germany.
The fish grill can be used universally and can be screwed to the edge of a fire bowl, a kettle grill or, of course, our fire barrel using a clamping screw. If you would like to grill your Steckerlfisch in a rustic way without a barbecue, directly at the lake, there is a stainless steel ground spike with which the barbecue device can be easily set up next to the campfire. If you still don't fancy grilled fish, you can of course also skewer a sausage and a steak.

In addition to the wooden skewers, Grillrost.com now also offers replacement skewers made of stainless steel. As always, Grillrost.com offers the same high quality of materials and workmanship. The replacement skewers are suitable for the asado holder. The skewers have a specially twisted tip with an undercut so that they do not slip out even when the skewers are tilted downwards. The skewers also have a tip on both sides so that they can be easily turned during grilling.

Surf & Turf skewers from the asado holder: the recipe

Preparation time approx. 2 hours

Ingredients for 6-8 people 

For the sea bream: 
4 sea bream  
1 lemon Fish seasoning of your choice 
Fresh Mediterranean herbs such as thyme, rosemary 
100 ml olive oil 
1 clove of garlic

For the Adana skewers: 
  • 500 g minced beef 
  • 0.5 tsp chilli flakes 
  • 0.5 tsp cumin seeds 
  • salt and pepper 
  • 1 tsp paprika powder 
  • 1 tbsp ajvar breadcrumbs 
  • 1 onion 
  • 1 clove of garlic 
  • 0.5 bunch flat-leaf parsley 
  • olive oil
Garnish: 
  • Mini rolls 
  • Ajvar 
  • Tzatziki 
  • Red onion, cut into rings 

Accessories 
  • Kitchen twine 
  • Large needle 
  • Kitchen brush

Preparing the sea bream

Firstly, rinse the fish in cold water and dry them with kitchen paper. Then season the inside of the fish with the fish seasoning and stuff it with the herbs and halved lemon slices. 

We sewed the belly of the fish with two stitches of kitchen twine so that the stuffing stays in place on the asado holder. 
Finely chop the remaining herbs and garlic and mix them with the olive oil and some of the fish seasoning. Brush the fish with this seasoning oil from time to time during grilling. 
Then place the sea bream on the asado skewers with the fish mouth first.

Chop the parsley and garlic clove into small pieces, then knead all the ingredients into a mince mixture that is not too moist. It is now very important that you chill the mince for at least an hour. This will help it stick to the asado skewer later. 

After the chilling time, place the meat on the asado skewers and place them directly over the fire.

Grilling the surf & turf skewers

Simply place the mini rolls on the asado spit and grill them with the surf & turf skewers. You don't need to heat up the oven for this. 

Place the skewers in the appropriate holder over the prepared bed of embers and grill for approx. 10-15 minutes on each side. The meat should be crispy on the outside and cooked through on the inside but not dry, and this also applies to the sea bream.
