Barbecue swords and the kebab skewer - beginner's recipe


When we saw the barbecue swords in the online shop at Grillrost.com, we knew immediately that we had to have these beautifully crafted skewers. We have recently turned into real skewer barbecuers because it's just so much fun and offers so many possibilities. The great thing about barbecuing with skewers is that they don't turn automatically and the man or woman at the barbecue can really get to grill the food.

Kebab skewer, a recipe for beginners
Today we have brought kebab skewers as a recipe, as we think they are great for getting started with the barbecue sabres. They are easy to make and really thankful for the roasted flavours and degree of doneness when cooking. The kebab skewers are grilled directly over a charcoal fire and get their typical smoky flavour from the dripping fat. As an idea of how you can enjoy the kebab skewers, we also provide a recipe for an open pita with kebab. For this, peppers are skewered onto the grill swords and grilled directly. The grill swords are also suitable for grilling vegetables and many other side dishes. The skewers in this recipe are made purely from beef, but you can also use minced lamb or a mixture of minced lamb and beef, depending on your taste.

Hardfacts about the barbecue swords
The barbecue swords are made of 100% stainless steel and the handle is made of solid beech wood. With a material thickness of 3 mm and a width of 15 mm, they are just right for providing good stability and are designed so that the food can be easily skewered. The shape also prevents food from falling off the skewers. The swords can be used over a charcoal fire with the aid of a grid. So, here we go with the great recipes for the kebab skewers, the paprika skewer, the yoghurt and the open pita with kebab

The kebab skewer

Please note that the mince mixture for the kebabs needs to marinate in the fridge for approx. 4-6 hours so that it holds on the kebabs later! 

Ingredients for 3 kebab skewers:
  • 500g minced beef or lamb 
  • 1 teaspoon of chilli flakes 
  • 1/2 teaspoon cumin 
  • salt 1/2 teaspoon coarse pepper 
  • 1/2 teaspoon sweet paprika powder 
  • 1 heaped teaspoon ajvar 
  • one onion 
  • 1 clove of garlic 
  • 4 stalks of leaf parsley 
  • rapeseed oil
The kebab skewer
Chop the onion, garlic clove and parsley leaves together using a food processor. Then knead all the ingredients together well and put them in the fridge for 4-6 hours so that they can infuse well. The mixture will become firmer when chilled and will adhere well to the skewers later. Then spread the mince mixture onto the skewers and press down firmly.
Brush the kebabs immediately with a little rapeseed oil and grill. The kebabs can then be removed from the skewers and kept warm if necessary. Turn once.

The pepper skewer

Ingredients:
  • Mini peppers 
  • salt 

Place the mini peppers on the skewer and grill them over the charcoal. Do this until they are soft and have a nice roasted flavour on the outside. You will need to turn them several times, otherwise they will quickly develop strong roasted flavours and also turn slightly black and no longer edible.

The yoghurt

Ingredients:
  • 500g yoghurt 10% fat 
  • Zest of half a lemon 
  • A little lemon juice 
  • salt 
  • 2 stalks of leaf parsley 

Firstly, chop the parsley leaves into small pieces. 
Then mix all the ingredients together and season the yoghurt with salt. 
You can then leave the yoghurt to infuse in the fridge.

The open pita with kebab

Ingredients:
  • Kebab skewer 
  • Grilled peppers 
  • yoghurt 
  • pita bread 
  • ajvar 
  • leaf parsley 

Firstly, place the pita bread on the barbecue over the residual heat until crispy. If you are using charcoal or logs, the heat from the embers is sufficient to grill the meat, peppers and pita bread over the charcoal. Then top the pita bread with the yoghurt, ajvar, grilled peppers and parsley leaves. 
Place a piece of the delicious kebab on top of the open pita.

Versatile application possibilities

At the end of the article, we want to show you a few more ways in which you can use the barbecue swords in a variety of ways.  
There are many savoury dishes that are made for the grill swords, such as the classic shashlik skewer, chicken wings on a skewer, sausages on a skewer, large scampi, picanha, or even bacon parcels filled with sheep's cheese and juicy BBQ belly meat cubes.  

Or you can make vegetarian dishes, such as different types of vegetables, small pre-cooked potatoes, various mushrooms, bread or sweetcorn on a skewer.  
You can also use the barbecue swords for desserts, for example to grill fruit, marshmallows or a sweet yeast dough.
