Greek grill plate from the fire plate


We were in the mood to rock the griddle again and when we were thinking about which dish we wanted to make, we thought of our favourite Greek and his Greek barbecue plate jumped straight to our minds. We were immediately hooked and built our version of the Hellas special grill plate. This is perfect for a hot plate and a cosy evening with friends or family. But let's start with what you need to set up the Greek barbecue plate.

We describe step by step how to prepare the individual components for the Greek barbecue platter and then later how to cook them on the griddle. Firstly, the individual components of the grill plate require some preparation time in the kitchen, but the preparation on the griddle is not very complex and does not take that long.

Preparation time
The preparation time is approx. 12 hours (including time for marinating) and you still need heatable oil for preparation on the griddle.

Souvlaki from the grill sword

  • 800g pork loin cut into 4 slices 
  • 1 tbsp oregano 
  • 1 tbsp lemon juice 
  • 100ml white wine 
  • 2 tbsp olive oil 
  • Pepper/ salt 

Mix the oregano, lemon juice, white wine, olive oil and a little salt and pepper to make a marinade. Place the pork loin in the marinade (in the fridge) for 12 hours. It is then placed on the grill swords.

Greek minced steaks

  • 800g minced beef 
  • 1 clove of garlic, finely chopped 
  • 0.5 tsp cumin 
  • 1 chilli pepper, finely sliced 
  • 0.5 bunch flat-leaf parsley, chopped 
  • 1 egg salt and pepper 

Mix the mince thoroughly with the remaining ingredients and season with salt and pepper. Then form mince steaks of 120g each.

Chicken gyros with onions

  • 400g chicken breast 
  • one teaspoon thyme 
  • 1 tsp oregano 
  •  one teaspoon paprika powder 
  • 1 clove of garlic, finely chopped 
  • one large vegetable onion, cut into rings 
  • 2 tbsp olive oil 

Cut the chicken into strips and mix with the remaining ingredients. Leave the gyros to marinate in the fridge for 12 hours.

Grilled vegetables with garlic oil

  • 2 small courgettes 
  • 2 pointed peppers 
  • Pepper/ salt 
  • lemon juice 
  • 2 cloves of garlic, finely chopped 
  • 150 ml olive oil 

Mix the lemon juice, oil and garlic and season with salt and pepper. Place the vegetables whole on a grill blade and brush with the garlic oil repeatedly while grilling.

Feta pans

  • 2 feta cheese 
  • Pickled chilli peppers 
  • 4 garlic cloves 
  • Tomatoes, finely chopped 
  • Olive oil 
  • Feta cheese seasoning 

Place the feta in an oiled cast-iron pan and sprinkle with the feta cheese seasoning. Then simply add the vegetables to the feta.

The easiest part. You simply get some flatbread. No preparation is necessary, just save some of the garlic oil for the grilled vegetables.

Preparation on the hotplate

Now comes the relaxed part of preparing the Greek barbecue platter, because we are about to light the fire so that we can grill on the griddle. If necessary, clean your griddle plate with some dry kitchen paper to remove any dust. The actual cleaning of the grill plate always takes place after grilling, when the plate is still at temperature. 

The most important thing when barbecuing is the fire and of course we also need this when barbecuing with the griddle. Now comes the moment you've all been waiting for: you make a fire. We had our fire plate on the kettle barbecue and made a nice fire in the centre of the kettle barbecue. Due to the nature and size of the fire plate, you get 3 different heat zones for barbecuing fun (viewed from the inside to the outside). Inside near the centre of the fire plate there is high heat, in the middle area there is medium heat and in the outer area you have moderate heat for the sensitive food. Once you have placed the plate on top, give it a little time to get up to temperature (this is the ideal time for the first barbecue beer or the first barbecue wine) and then you can get started straight away.

Now simply place the prepared components one after the other on the oiled plate and grill. It is best to start with the feta pan and the vegetable grill blade, as these take the longest. If you have the stainless steel wok attachment, secure it to the grill plate and place the pan on the attachment. The high heat in the centre gives the feta a great roasted flavour. But be careful not to burn the cheese. 

Spread all the ingredients for the Greek grill plate on the hot plate in the hot zone and make sure that nothing burns. You can then gradually move everything a little further out. The flatbread takes the least time, so it is the last component to go on the griddle. Our suggested order of preparation is as follows: Feta pans and grilled vegetables first. Then the Greek mince steaks and the souvlaki. Thirdly, the chicken gyros and then finally the flatbreads, which you brush lightly with the garlic oil every now and then during grilling. Once you have grilled all the components, arrange them on a large platter. A few Greek olives, pickled chillies and a portion of tzatziki go perfectly with it. Enjoy the flavour!
